1 1/2 cups finely chopped celery
1 cup finely chopped onion
1 cup chopped carrot
2 tablespoons olive oil
1 cup milk
1/3 cup chopped fresh parsley
1/4 cup chopped fresh oregano
In a large bowl, mix celery, onion, carrot, olive oil, milk and parsley. Sprinkle cheese over celery mixture. Chill in refrigerator for at least 1 hour.
Preheat oven to 350 degrees F (175 degrees C). Place celery mixture in a large resealable plastic bag. Place celery mixture in plastic bag with other salad ingredients; seal. Shake vigorously to mix well.
Heat the olive oil in a large skillet over medium heat. Place carrot mixture over medium heat, then discarding carrot and celery mixture. Cook celery mixture until just tender, about 5 minutes.
