4 boneless, skinless chicken breast halves
1 cup olive oil
1 cup Italian-style seasoning
1 (8 ounce) can whole peeled tomatoes, with juice
1/2 cup chicken broth
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 teaspoon salt
2 cloves garlic, minced
1/4 cup olive oil
1/4 cup water
Preheat oven to 375 degrees F (190 degrees C).
Place chicken pieces in a shallow baking dish and flatten with a biscuit or wooden spoon. Place a layer of oil on each piece, then top with seasoning and tomatoes. Pour chicken broth and garlic powder over the entire surface of the chicken. Cover, and sprinkle chicken with basil, salt, garlic, olive oil, and water.
Bake uncovered at 375 degrees F (190 degrees C) for 2 hours.
