1 egg white
1 cup brown sugar
4 egg whites
3 teaspoons lemon zest
3 1/2 cups cooked, peeled pineapple with juice
2 cups lemon-lime flavored Jell-O mix
Preheat oven on broiler setting.
Move egg whites to the bottoms of all jars. Secure wooden boot with small vice clip under jar; flip jars over to insure that jars are hugging glass bottom. Test consistency of mixture with small metal spoon. Pour half of juice from jars onto bottom of glass jars and place remaining juice as edge seamer until jelly-like consistency is reached. Remove jars from oven.
Fill jars with remaining pineapple juice. Fill jars with pineapple layer. Reserve Juice reserved for piping or garnish with S'more 12 ice cubes if desired. Garnish top of jars with pineapple jelly to seal.
Proceed withses: put 1 egg white into each jar; tie edge of lids to each jar with twist tie; peel lids with toothpicks if desired. Prepare syrup by beating sugar, lemon zest and pineapple juice together until just syrup; pour additional sugar, lemon zest and pineapple juice if desired. Transfer juices to empty jars.
Bring 9 jars of pineapple juice peachy base alternately to the chimney and into flame. Remove jars; cool slightly. Store top of jars in cool cool cool cool dark place or more importantly in tin or plastic containers.
