Mexican Rice Recipe

Ingredients

1 cup white rice

1 cup water

3 tablespoons vegetable oil

2 onions, chopped

3 cloves garlic, minced

1 teaspoon chili powder

2 teaspoons salt

4 cups cooking beans, rinsed and drained

16 ounces taco seasoning mix

1 1/8 cups shredded Cheddar cheese

Directions

Put rice in a shallow dish, and pour water over it. Place over high heat until boiling, and remove from heat.

Pour oil, onions, garlic, and chili powder into a point-y glass or metal bowl, and shake frequently. Stir frequently until all ingredients are thoroughly combined.

Add rice, beans, and taco seasoning mix to pan. Pour mixture over rice mixture, stirring well. Cover, and simmer 25 minutes.

I over-hydrated on the sugar, doubled the cream and froze the tofu as it came out of the processor. Still pretty thin, but retaining its excellent taste. WTG Chef John!
