1/2 cup olive oil
1/4 teaspoon ground cinnamon
2 cups all-purpose flour, divided
4 eggs
1/2 cup white sugar
2 cups dried apricots
1 cup raisins
1 cup figs
1/2 cup brown sugar
Preheat oven to 375 degrees F (190 degrees C).
Heat the oil in a medium saucepan over medium heat. Stir together the cinnamon and 2 cups of the flour, then stir in the remaining flour, 1/2 cup at a time, until just moistened. Stir in the sugars, 1/2 cup at a time, until just moistened. Add the eggs one at a time, beating well after each addition. Mix in the dry ingredients until just moistened. Form dough into 1 inch balls and place them 2 inches apart onto ungreased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until edges on a candy thermometer come off. The roll recipes all call for baking the balls in the preheated oven at 375 degrees F (190 degrees C.) release after 10 minutes. Cool completely before removing from the baking sheet.
