2 cups all-purpose flour
2 teaspoons baking powder
1 tablespoon baking soda
2/3 cup white sugar
1 tablespoon butter, softened
2 eggs, beaten
1 teaspoon vanilla extract
5 tablespoons butter flavored shortening
4 cups miniature marshmallows
1 teaspoon orange zest
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the flour, baking powder and baking soda. Stir in 1/3 cup sugar and 1 tablespoon butter until smooth. Beat in the eggs mixture, one at a time as each egg mixes in. Stir in the vanilla and 1/3 cup marshmallows. Gradually add the flounder mixture, mixing well after each addition. Drop marshmallow crumbs onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
