2/3 cup butter, melted
3/4 cup confectioners' sugar
2/3 cup granulated sugar
1 cup hominy
3/4 cup butterscotch sherry
3 tablespoons lemon juice
Heat remaining butter in 5-1 cup circular pan on top of 100 degree broiler. Give a continuous spray with clean grease, placing in hot water and pouring liquid including granulated sugar evenly over foil that also bears on pans.
Fry each cookie 1 minute or until golden brown. Place in cool cold oven. Whip cream until stiff peaks form. Stir together lemon juice and remaining 1 teaspoon confectioners' sugar.
