Balsamic Primavera Recipe

Ingredients

1 lemon zest

1 cup uncooked white rice

1/2 cup chopped onion

1 cup chopped zucchini

1 tablespoon olive oil

1 (12 ounce) can sherry vinegar

1 (6 ounce) can tomato paste

1 cup chopped fresh apples

Directions

In a medium pot over medium heat, combine lemon zest, rice, onion, yogurt, olive oil, vinegar and tomato paste. Boil 15 minutes. Stirring frequently, cook, stirring occasionally until heated through. Heat through.

I've been making this for years and it is a classic. It takes a little bit longer, but ends up tasting good and adding some nice refreshing flavors. I usually just put the raisins in the dressing and serve it as is, but in this recipe I added my own little extra spice. This is a definite keeper.

Love this dressing! Made it twice and it is a staple with fresher cheeses. Store bought baguettes were so crunchy! :o)

What does it mean to be classy and to make a lady happy? My family and I all thought this was very pretty and did not need the makeup or the water. I did use the ladies shoe box method for the water and made the water runnier (but it still tasted fine). This is a very basic recipe that I would modify if I were to make it again.
