4 cloves garlic, wrapped in heavy foil
1 1/4 cups water
3 carrots, peeled and sliced
1/4 cup olive oil
1/2 cup white wine
2 tomatoes, chopped
1 (8 ounce) package ricotta cheese
1 cup grated Parmesan cheese
salt and pepper to taste
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 6 quart baking dish.
In a food processor, process cloves, water, carrots and olive oil until finely chopped; stir in wine, tomatoes, ricotta, salt and pepper. Transfer to the prepared baking dish.
Bake in preheated oven for 20 minutes. Let stand 5 minutes before serving.
