Sauteed Spinach and Potato Ball Recipe

Ingredients

8 eggs, heated

1 teaspoon salt

1/2 teaspoon ground black pepper

3 (14 ounce) cans diced cooked potatoes

2 cups mozzarella cheese, shredded

1/4 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Heat the roast in the oven for about 15 minutes, or until cooked through.

Meanwhile, bring a large saucepan of water to a boil. Add potatoes and cook until tender but firm, about 10 minutes. Transfer potatoes to a large (8 inch) glass serving dish, sprinkle with salt and pepper and bake until potato is tender and firm, about 15 minutes. Cool, slice and serve.

I thought this dish was pretty good and used my pasta machine (also bought in the deli section from Costco) to prepare it. I wasted a great deal of time and effort trying to turn a passimiento into something tasty. It wasn't until I realized I was supposed to saute the onions that I gave up the attempt. No marinara? Too lazy to try. No, I did not. I might try the fish salad next time. Tasted so good. I made it again with olive oil and cheese, and it was still yummy.
