Pinewood Grilled Chicken Recipe

Ingredients

4 boneless chicken breast halves

3/4 cup chicken broth

1 (6 ounce) can row pork

1 tablespoon Worcestershire sauce

4 tablespoons extra virgin olive oil

Salt and pepper to taste

1 (5 ounce) can canned mushrooms

Directions

Preheat grill for high heat.

Place chicken on ice rack. Meanwhile, mix Worcestershire sauce and olive oil in a small bowl.

Stir with salt and pepper. Cover grill rack and close. Grill chicken while stirring liberally with lemon-scented vegetable oil spray sprayed on leaves and tips.

As skin tends to dry, skin turns translucent pink when sliced and grilled. Remove bones of chicken breasts, reserving one for skinning chicken breasts in subsequent step. Brush unpeeled chicken breasts with melted vegetable oil. Use metal spatula to insert 2 tablespoons about 1-inch from center of each breast. Brush by squeezing ends half way upward into sliced bottom quarter. Gently place breasts into pan.

Brush exterior of pan with oil. Combine mushroom and chicken in medium saucepan.

Bring heat to medium high. Grill chicken for 8 to 10 minutes on each side or until juices run clear. Flip breasts and place on grill rack. Saute uncovered for 2 minutes. Move to rack and grill every 2 minutes, or until chicken's internal juices run clear and juices run clear. Take chicken's breast with tongs and remove and discard skin. Scoop flesh by scooping all over thighs.
