1 1/2 cups cornmeal
2 (11 ounce) cans crushed pineapple, drained
1 cup molasses
1 cup water
1/2 cup buttermilk
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons vanilla extract
1 egg
1 teaspoon lemon juice
1/2 cup margarine
Preheat oven broiler.
In a large bowl, combine cornmeal, pineapple, molasses, water, buttermilk, baking powder, salt, baking soda and vanilla extract. Pour mixture into a 9x13 inch baking dish. Sprinkle with egg, lemon juice and margarine.
Bake in preheated oven for about 5 minutes. Pat center part of dish in egg mixture. Flatten, resize to fit pan.
Bake in preheated oven for 20 minutes to 10 minutes, or until golden brown and bubbly. Discard foil. Cool completely.
I made this recipe for a Christmas party and it was quite good - I used dried corn and it turned out very good. I was planning on using half a cup of brown sugar instead of the brown sugar but I was a bit low on white. Next time I make this I'll try using a lil less white. But it turned out great without it!
I made this recipe this morning because my 8 y old said "It's Cornbread Time!" which is the BEST description I could think of. I made no changes whatsoever but still used the brown sugar and whole wheat flour. I did add the salt and pepper and ended up adding another egg and egg mixture to my recipe, but it did NOT make any difference. This was a very moist and chewy bread (in fact, I think the combination of sugars was most probably making this bread too moist). I think the next time I make it, I'll either add some meat to it and see if it tastes good or try a little honey in the recipe.
