2 pounds ham, cut into 1 inch cubes
1 1/2 teaspoons salt
10 cloves garlic, pressed
coarse salt and freshly ground black pepper to taste
1 1/2 pounds veal medallions
1 cup water
1 tablespoon sugar
1 tablespoon vegetable oil
Place ham cubes in a 2 quart casserole dish. Sprinkle veal medallions with salt. Season with pepper, cornstarch and coarse ground black pepper. Layer meat medallions over veal medallions. Pour 1 cup water over veal medallion. Spray a small amount of oil in a large skillet over medium-high heat. Pour 1/4 cup moistened pineapple juice through plastic bag into skillet/pan. Reduce heat to medium and place dish on baking board if necessary.
Bake for 8 hours in the preheated oven.
