1 cup blueberries, rinsed and drained
1 1/2 tablespoons butter
3 1/2 tablespoons brown sugar
3 teaspoons lemon juice
5 teaspoons lemon zest
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 teaspoon white sugar for garnish
Slice blueberries into 1/2-inch slices. Stir butter, brown sugar, lemon juice and lemon zest into blueberry slices. Heat a medium saucepan over medium-low heat. Using a wooden spoon, stir butter mixture into blueberry slices. Stir until all cream is melted. Mix lemon juice, lemon zest and lemon extract into blueberry mixture. Pour mixture over blueberry slices. Place slices on serving platter. Garnish with lemon slices. Refrigerate 2 hours before serving.
