1 (1 ounce) package instant whipping cream
1/4 cup apple juice
1/2 teaspoon ground cinnamon
1 (3 ounce) package frozen whipped topping, thawed and drained
Combine liquid ingredients in a medium saucepan; bring to a boil. Reduce heat to medium-low and simmer 1 minute, until thickened. Remove from heat, place with wire whisk and whisk until smooth. Carefully stir in ice, and set aside.
In a medium bowl, beat together softened cream, apple juice, cinnamon and whip.
To serve: in a medium bowl, place one cup of cream over ice water, whisk until thickened. In particular, add the sweet potato mixture so that everything is smooth. Spread another cup of cream over potato ice as well.
