2 tablespoons olive oil
1 small onion, diced
2 green onions, chopped
3 cloves garlic, minced
2 teaspoons paprika
1 teaspoon dried red chile pepper
2 (8 ounce) cans black beans, rinsed and drained
1 1/2 cups dry white wine
1 (8 ounce) package cream cheese, softened
1 (4 ounce) can tuna, drained
Heat oil in a large skillet over medium heat. Saute onion and green onions in olive oil until they are crisp. Stir garlic into skillet, and cook until garlic is softened, about 5 minutes. Stir in paprika, chili powder, and red peppers. Cook, stirring, about 10 minutes. Remove from heat.
Fold in black beans, white wine, and cream cheese. Mix thoroughly. Stir into salmon, onion and green onions mixture.
I love this recipe. It's simple but tasty. I didn't have any lettuce on hand but this recipe makes enough for an entire meal. i also used olive oil instead of vegetable oil. a few adjustments: 1) used red bell pepper in jar and stroked it nice and long. 2) used nutritional yeast and probiotic everthing but yoghurt was my go-to. 3) used nutritional yeast powder and probiotic everthing but yogurt was my go-to.
