1 cup whole pumpkin
1 cup brown sugar
1 cup butter
1 egg
1 teaspoon pumpkin pie spice
1 teaspoon lemon zest
1 cup white sugar
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Set aside.
In a large bowl, cream together the whole pumpkin, brown sugar, butter and egg until light and fluffy. Mix in the pumpkin pie spice and lemon zest. Mix in the sugar, then stir in the white sugar. Drop the mixture by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Allow cookies to cool completely before filling.
