1/2 cup butter, softened
1/4 cup corn syrup
1 cup brown sugar
1 1/2 cups white sugar
1 teaspoon vanilla extract
8 large marshmallows
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 375 degrees F (190 degrees C).
In a medium saucepan, melted butter and brown sugar. Remove from heat and allow to cool slightly. Mix together corn syrup, brown sugar, white sugar and vanilla. Stir in marshmallows, pecans and marshmallows.
Drop marshmallow mixture into cookie sheet. Cover tightly with waxed paper to prevent spreading. Place 1 marshmallow mixture in the center of one cookie, seam side down.
Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Immediately press onto ungreased cookie sheet. Allow to cool completely.
