1 1/2 pounds lean ground beef
1/2 cup chopped onion
1 teaspoon olive oil
1 (11 ounce) can chopped carrots
1 (14 ounce) can beef broth
4 (10 inch) flour tortillas
Place the beef, onion and olive oil in a large saucepan. Boil over high heat until heated through. Add carrots, scallions and parsley. Reduce heat and simmer for about 10 minutes.
Add water to pan and reduce heat. Add beef broth and simmer for about 5 minutes. Lightly filter through a sieve or cheese cloth.
