Apricot and Citrus Fruit Cocktail Muffins Recipe

Ingredients

1/2 cup applesauce

1/4 cup all-purpose flour

1/2 cup packed brown sugar

1 egg

3/4 cup milk

1/2 cup cornstarch

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon white sugar

1/4 teaspoon ground nutmeg

1/2 cup thickened whipped cream

1 cup miniature marshmallows

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10x15 inch baking pan.

In a large bowl, mix together applesauce, flour, brown, white sugar, egg, milk and cornstarch. Stir in salt, cinnamon, and nutmeg. Pour batter into prepared pan.

Bake 20 minutes in the preheated oven, until a wooden toothpick inserted into the center comes out clean. Remove from oven, and brush tops of muffin cups with beaten egg.

Makes 6 heavy duty muffins. Store refrigerated.
