1 cup packed light brown sugar
3 tablespoons nonfat milk
1 teaspoon salt
2 tsp baking soda
3 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1/3 cup chopped walnuts
1 cup white sugar
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Melt brown sugar in a large bowl. Beat together the nonfat milk, salt, baking soda, pumpkin pie spice, and cinnamon. Stir into brown sugar mixture, making sure to thoroughly mix. Pour into cookie sheets.
Bake in preheated oven for 25 to 30 minutes, or until golden brown. Remove from oven. Cool completely. Wrap or wrap plastic wrap in aluminum foil. Place on trashcan or large dish or plastic sheet to dry. Roll cookies in pitted, cinnamon-brown sugar mixture.
