2 tablespoons peanut butter
2 tablespoons butter
2 teaspoons lemon juice
1 tablespoon honey
Combine peanut butter, lemon juice and honey in a large bowl. Mix thoroughly. Refrigerate until ready to use.
Preheat oven to 450 degrees F (220 degrees C).
Place chicken in a roasting pan and drizzle with peanut butter mixture. Season with honey and lemon juice before roasting. Place chicken over chicken in roasting pan.
Bake uncovered at 450 degrees F (220 degrees C) for 1 hour or until chicken is cooked through and juices run clear. Remove from roasting pan and cool on metal rack. Place chicken on rack in cold oven. Let cool completely before cutting into cubes or pieces.
