3 tablespoons butter
2 cups all-purpose flour
2 tablespoons granulated sugar
3 eggs
2 tablespoons lemon juice
1/4 cup lemon zest
1 teaspoon vanilla extract
1 (30 ounce) can whole strawberries
Combine flour, sugar, eggs, lemon juice and lemon zest in small bowl. Mix well.
Heat oven to 350 F. Grease one 8x8 inch baking dish. Make a well in center of flour mixture, then pour batter into pan; rim with pastry trim. Bake in preheated oven for 1 hour, checking to see that a chocolate center is not sticking. Drain pan; set aside.
Meanwhile, stir together lemon juice and lemon zest in small bowl; mix well. Stir strawberries into lemon zest mixture; pour over cake. Bake 20 minutes or until light golden brown. Serve warm.
