Pineapple Pumpkin Pie Recipe

Ingredients

1 (9 inch) prepared graham cracker crust

1 1/2 cups white sugar

2 tablespoons vegetable oil

1/2 cup margarine

2 egg yolks

1 1/2 teaspoons vanilla extract

1 1/2 teaspoons lemon zest

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 (8 ounce) package sliced pineapple

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a medium bowl, mix sugar, oil, margarine, egg yolks and vanilla extract; mix well. Stir egg yolks into sugar mixture. Stir pineapple into pumpkin mixture. Pour into pie shell.

Bake 20 minutes in the preheated oven, or until filling is set and pie is golden brown. Chill before serving.
