Cocoa Nut Cookies II Recipe
1/2 cup butter
1 cup unsalted white sugar
2 eggs
1 teaspoon baking soda
1 cup packed light brown sugar
3 cups crushed cornflakes cereal
1 teaspoon vanilla extract
1 teaspoon lemon zest
3 1/2 cups diced celery
2 cups all-purpose flour
3/4 cup white sugar
1 teaspoon baking soda
1 tablespoon margarine
Preheat the oven to 350 degrees F (175 degrees C). Line a cookie sheet with parchment paper.
In a large bowl, cream together butter, brown sugar, granulated sugar, cornflakes cereal, vanilla extract, lemon zest, celery and flour until smooth. Beat in the sugar and eggs, one at a time, then stir in the baking soda. Combine all ingredients except 1 cup of the flour, mix well.
Roll seven cookies out and place on the prepared cookie sheet. Sprinkle remaining flour over dough, then add powdered sugar and margarine.
Bake for 10 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
