2 tablespoons lemon juice
1 tablespoon orange juice
2 tablespoons cider vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon white sugar
3 teaspoons lemon juice
2 teaspoons orange juice
1 (8 ounce) can pineapple juice concentrate
1 teaspoon lemon zest
In a small bowl, mix lemon juice, orange juice, cider vinegar, salt and pepper. Mix thoroughly. Stir in sugar, lemon juice and orange juice. Pour mixture into the prepared jar.
Arrange the pineapple slices on a piece of waxed paper. Fill the jelly beans with pineapple juice concentrate and lemon zest. Wrap the wax paper around the slices of pineapple.
Store jam in an airtight container. Toss pineapple jelly beans with lemon juice, orange juice and pineapple juice concentrate before serving.
