2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon baking powder salt
1/2 cup margarine, melted
1 cup packed light brown sugar
2 eggs
1 1/2 cups canned pumpkin puree
2 tablespoons vegetable oil
2 tablespoons egg white
1 1/2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
Preheat oven to 400 degrees F (200 degrees C).
In a large bowl, mix the flour, baking powder, soda, ginger, baking powder salt, margarine, brown sugar, eggs, pumpkin and oil. Mix in the pumpkin, vegetable oil and egg white. Fill and press seam-side down.
Bake pie 80 minutes in the preheated oven, stirring 30 minutes before pie is done. Remove from oven, brush top with egg white and sprinkle with pumpkin pie spice. Return to oven and broil 4 minutes. Remove from oven, brush top with pumpkin pie spice and sprinkle with pumpkin pie spice.
