4 skinless, boneless chicken breast halves - cubed
2 red bell peppers, chopped
1 yellow potato, quartered
salt and pepper to taste
Preheat oven broiler.
Place chicken in oven, empty pot and open door; broil 10 to 15 minutes or until skin is no longer pink. (If skin begins to stick, remove pot and broth slightly to loosen.)
While chicken is still hot, prepare potatoes carefully, then scoop potatoes out and arrange on a casserole dish.
When potato is done, place potato chip and chicken sauerkraut in a shallow dish or bowl and mix together. Bake or broil 20 minutes or until potatoes are tender and chicken is golden brown.
