3/4 cup margarine, softened
1 1/3 cups sifted all-purpose flour
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 teaspoons lemon juice
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 teaspoon salt
1/16 teaspoon ground cinnamon
1 teaspoon lemon zest
Preheat the oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.
Heat margarine in large saucepan over medium-high heat. Remove from heat: allow to cool, about 5 minutes.
Combine the flour, sugar, egg, vanilla, lemon juice, almond extract and flour. Mix with thumb, making sure you do not over mix. Pour batter into the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until bubbly. Remove cookie sheets from pans and spread with remaining sugar/whipped cream.
