1 1/2 pounds skinless, boneless chicken breast halves
1 (10 ounce) package frozen chopped spinach with liquid
1 (10 ounce) package frozen green peas, undrained
1 cup chopped fresh pineapple
1 small onion, sliced into wedges
1 large carrot, cut into 4 wedges
1/2 cup whole milk
2 tablespoons butter
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a large bowl. Add spinach and peas, then the onion, carrot, and pineapple; toss.
In a small bowl, mix butter and salt. Spread mixture into chicken pieces, then arrange in a single layer on a large baking sheet.
Bake in preheated oven for 30 minutes. Remove chicken from oven. Place on wire rack. Cool and shred.
