3 eggs
1 cup apple juice
1 1/2 cups milk
1 egg, beaten
1 teaspoon orange zest
1/2 teaspoon ground cinnamon
2 teaspoons butter
1 tablespoon molasses
Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8x8 inch baking pan.
In a saucepan, mix together eggs, apple juice, milk, egg, orange zest and cinnamon. Heat to a boil, stirring constantly. Remove from heat and stir in butter, molasses and applesauce or the milk/apple juice mixture. Cook, stirring constantly until thick, until all liquid is absorbed and mixture is pale in color. Pour stiff, lumps remaining milk or flour into saucepan. Cool to lukewarm. Let cool 15 minutes.
Preheat oven to 500 degrees F (260 degrees C). In a medium bowl, lightly beat egg whites, then gradually drizzle egg white syrup onto dry ingredients. Stir in 1 tablespoon Hot Butter/Oregano, 1/2 teaspoon salt and remaining 1 tablespoon milk.
Drop by steaming spoonfuls onto prepared baking pan. Bake in preheated oven for 20 minutes. Cool 10 minutes, then turn out onto wire rack and cool completely. Reserve about 4 tablespoons for others.
