Peacock Pound Cake Recipe

Ingredients

1 cup brown sugar

1 cup applesauce

1 egg

1/3 cup milk

3 teaspoons vanilla extract

1 teaspoon almond extract

2 cups all-purpose flour

3 cups packed brown sugar

3 tablespoons baking powder

1 teaspoon salt

1 1/2 teaspoons baking soda

1 teaspoon white sugar

1 teaspoon vanilla extract

1 cup butter cream

1 (11 ounce) package buttery round crackers

1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.

In a large bowl, mix brown sugar, applesauce, egg, milk, vanilla, almond extract, flour, brown sugar, baking powder and salt. Mix until sugar is dissolved and mixture is just a little clumpy. Stir flour mixture into applesauce mixture into a large bowl. Stir together the brown sugar mixture and butter mixture. Fold in cracker crumbs and nuts. Pour batter into prepared pans.

Bake in preheated oven for 35 minutes. Cool in pan for 5 minutes before removing from pans to wire racks to cool completely.
