Amy's Cricket Pie Recipe

Ingredients

1 (3 ounce) package instant vanilla pudding mix

1 (3 ounce) package happy hour orange flavored Jell-O

1/2 cup vegetable oil

2 eggs

1 cup white sugar

1 teaspoon baking powder

1 teaspoon lemon extract

1 cup chopped peanuts

4 (8 ounce) cans cream cheese, diced

1 cup chopped green onions

1 cup chopped pecans

Directions

In a medium bowl, mix the pudding mix, gelatin, oil, eggs, sugar, baking powder, lemon extract and chopped peanuts until well blended. Pour mixture into the bottom of a 9x13 inch pan or glass dish. Cover and refrigerate overnight.

The next morning, preheat oven to 400 degrees F (200 degrees C). Line the bottom of a large oven dish with parchment paper.

Place pie in preheated oven until pie starts to thicken with liquid, about 15 minutes. Remove and let cool completely.

To Make Cream Cheese Frosting: Mix together cream cheese, yellow part, green part and pecans. Beat whites until foamy and spread over pie. Cut into squares. Store covered in refrigerator.
