1 cup butter, softened
1 cup packed light brown sugar
3 eggs
1/2 cup brown sugar
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon iodized salt
2 teaspoons vanilla extract
1 1/2 teaspoons apple pie filling
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, then mix in the brown sugar. Combine the brown sugar mixture, flour, baking soda and salt; stir into the creamed mixture. Mix in apple filling, 1/2 cup at a time. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
