2 eggs
1 1/2 tablespoons vegetable oil
1 1/2 tablespoons salt
1 cup milk
1/2 cup chopped onion
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1/2 teaspoon dried parsley
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1 cup chopped fresh parsley
2 tablespoons egg substitute
2 tablespoons olive oil
1 teaspoon Italian seasoning
1 teaspoon dried basil
3 tablespoons kosher salt
Heat oil in a large skillet over medium high heat. Stir together the egg, oil, salt, milk, onion, green bell pepper and red bell pepper. Cook over medium heat, stirring constantly, until peppers are lightly browned.
Combine the parsley, oregano, parsley and egg substitute in small portions. Mix until well coated. Add olive oil, Italian seasoning, basil and salt. At this point, stir in eggs to wit stir.(Repeat with the remaining ingredients.) Serve over rice or brown rice.
