Mom's Apple Oatmeal Bread Recipe

Ingredients

2 1/2 cups butter, softened

3 cups white sugar

1 egg

1 teaspoon vanilla extract

1 1/2 teaspoons apple pie spice

1 1/2 teaspoons baking soda

3 cups all-purpose flour

1 teaspoon baking powder

3 teaspoons baking soda

4 teaspoons baking mix

2 teaspoons baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/8 teaspoon ground ginger

2 1/2 teaspoons cinnamon annu mi, crushed

1 egg

1 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, one at a time, then stir in the vanilla. Beat in the flour, baking soda and baking powder; beat into the butter mixture alternately with the sugar and the egg.

Spread the batter into the prepared muffin liners.

Bake in the preheated oven 10 minutes or until a toothpick inserted into the center of the muffin comes out clean. Remove muffins from pan and let cool on a wire rack.

While muffins are still warm, remove muffins from pan. Decorate with fruit of your choice: apples, lemonade, cantaloupe, pomegranate, pineapple or apple pie. Cool before removing from pan.

To make the topping: Fill muffins with the filling from the fruit of your choice. Frost with a candy-coated lemon-lime flavored rim.

I tried this out for my family and it worked... amazing! Couldn't have been better with the fresh strawberries and cream. Won't try any changes until I've tried the recipe. Thanks for sharing this simple recipe

We made this toasting/cooling bread for a football game.... Baked it in our toaster oven ... still had fun ;)

I substituted brown sugar for half the white sugar in an attempt to reduce the sweetness of the sugar. I was pleased to find that this was not only delicious but that the oatmeal is actually flavorful! Slightly nutty aroma from the homemade oatmeal was overpowering. I 2-3 spooned half the oatmeal into my hand instead of just 2 tablespoons. I 2-3 spooned the remaining half into my oven and baked for about 45-50 minutes. My husband 1-2 spooned half the batter into his bread machine before taking out the butter, salt, and sugar. He let the bread cool for a few minutes before he used it.
