6 pounds beef chuck, cut into 1 inch cubes
1 onion, cut into 1 inch cubes
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon dried oregano
2 teaspoons dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
2 tablespoons olive oil
2 tablespoons white wine
2 teaspoons vodka
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef chuck, onion, flour, salt, oregano, basil, thyme, rosemary, sage, thyme and olive oil. Mix well.
Heat the wine and vodka in a glass bowl, or small saucepan. Pour the mixture over the beef mixture.
Reduce the heat to medium low, and simmer for several minutes to enhance flavor. Stir occasionally until beef is evenly browned.
