Coconut Cabbage Soup Recipe

Ingredients

1 1/2 tablespoons olive oil

5 carrots, finely chopped

2 stalks celery, chopped

3 bay leaves

1 1/2 teaspoons Italian seasoning

1/2 teaspoon salt

1 teaspoon dried black pepper

6 cups water

1 1/2 tablespoons dried minced onion

1 pound bacon, sliced into 1/2 inch strips

1 small onion, diced

1 tablespoon potatoes, peeled

2 tablespoons cornstarch

1 teaspoon baking powder

1 cup milk (optional)

Directions

Heat oil in a large saucepan over medium heat. Add carrots and celery and saute until tender; sprinkle with salt, pepper, water and bread crumbs. Reduce heat. Bring to a simmer, stirring occasionally, covered, cover and simmer over low heat for 20 minutes.

Add bread crumbs, onion, potatoes, cornstarch, baking powder and milk. Simmer, stirring occasionally, for 10 minutes. Stir in bacon.
