1/2 cup orange juice
1/2 cup sifted all-purpose flour
1/2 cup white sugar
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup rolled oats
2 cups brown rice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan.
In a large bowl, mix orange juice, sugar, oil, egg, vanilla extract and oats.
Pour boiling orange juice mixture over peanut butter layer and stir to coat. Place a large spoonful of batter into each muffin cup.
Bake in preheated oven for 20 to 25 minutes, until golden. Save and serve hot or cold.
