1 (8 ounce) package parmigiano (1 cup) crust flour
1 teaspoon salt
1 tablespoon butter
3 egg yolks, beaten
1 1/2 cups water
1/3 cup ricotta cheese
2 tablespoons butter
2 tablespoons red food coloring
1 teaspoon dried basil
1 tablespoon grated parmesan cheese
salt and pepper to taste
Preheat oven to 400 degrees F (200 degrees C).
Unroll dough and place into lightly greased sheet pan.
In a large bowl, whisk together flour, salt, and 1 tablespoon butter until well blended. Baste with egg yolks, 1 1/2 cup water, 1/3 cup ricotta, 1 tablespoon butter, and 2 tablespoons red food coloring. Spread evenly into prepared pan.
Bake 50 to 55 minutes in the preheated oven, until center springs back when lightly tapped. Cool completely before cutting into squares.
