Pocket Casserole Recipe


1 (1 ounce) square buttered toast

4 tablespoons blueberries, rinsed

1 cup brown sugar

1 tablespoon mayonnaise

1 teaspoon apple pie spice

1 cup shredded Swiss cheese


In a large bowl, combine toast, blueberries, brown sugar, mayonnaise, apple pie spice and Swiss cheese. Place on parchment lined cookie sheet. Place browned pan on cookie sheet.

Bake at 350 degrees F (175 degrees C) for 3 hours. Serve warm or cold.

I submitted this recipe many years ago as an easy pickle recipe..since then it has become one of my top 10 recipes !!I put the celery in the mixture to make it a little different and I think that is overall good.However, I added salt, pepper, and a little cumin to give it a little more heat.The salt, pepper, and caumin give it soooo much more flavor, and would probably make it alot easier if I subbed rice vinegar for the main flavoring.but who gives a shit about the beet pulp, right?!?! its there for flavor, I believe..I tasted it but didn't count it..someone make this and leave a review for later...thanks!Petrina 5.00 It was absolutely delicious!
