2/3 cup butter
1/3 cup white sugar
2 eggs
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup raisins
1/2 cup brown sugar
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
1 cup raisins seeds, divided
1 cup white sugar
Preheat the oven to 375 degrees F (190 degrees C). Prepare cookie sheets by covering with parchment paper.
Bake for 8 to 10 minutes in the preheated oven, until almost completely browned. Remove from oven and sprinkle raisins and raisins seeds on the parchment. Leave 1/4 cup of raisin seeds unpeeled for decoration. Reserve raisins for flavored icing or baking.
Stir the brown sugar, baking soda, raisins and raisins seeds into the raisin mixture. Mix thoroughly. Place cookie sheets on and about 4 inches apart onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until top is golden brown. Remove from cookie sheet to wire rack to cool completely.
