I ended up making french toast with some of the leftovers but found that I needed to use some less water. This is also why I pressed my potatoes so hard. I wanted to add a savory element but found that while cooking the dish the potatoes were soft. Either way, I spicied up the onions and added a little garlic powder. I added more broth so that my guest could have something to drink and I think that was a nice way to add some different flavor in an everyday veggie.
