1 large onion, sliced into thin strips
2 cups water
1/2 teaspoon minced garlic
2/3 cup ketchup
1 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon white sugar
1/2 cup shredded Cheddar cheese
1 cup heavy cream
1 cup shredded Swiss cheese
1 cup frozen mixed vegetables, thawed
Sprinkle onion and water over chicken in large stockpot or Dutch oven; cover. Bring to a boil.
Stir garlic into water and fry until golden and translucent, about 5 minutes.
Add chicken and cook over low heat about 5 minutes, stirring frequently.
Add ketchup, salt, oregano, sugar, Cheddar cheese, cream, Swiss cheese, mixed vegetables and cook for about 5 minutes, stirring. Reduce heat to medium and add chicken. Continue cooking about 5 minutes, stirring occasionally.
