1 tablespoon butter
2 ounces Italian sausage, casings removed
3 (10 ounce) packages frozen mixed vegetables, thawed
12 eggs
1/4 teaspoon lemon zest
1/4 teaspoon salt
3 (8 ounce) packages cream cheese, softened
12 cups cooked chicken noodle soup
3 cups shredded Swiss cheese
Preheat oven to 350 degrees F (175 degrees C). Grease two 8x8 inch baking pan shallow dish pans.
Melt butter in a large mixer bowl. Beat in sausage, mixed vegetable, eggs and lemon zest. Stir in salt and Parmesan. Mix well and place into prepared pans.
Spoon the mixture over the casserole forms in the prepared pans. Top with cream cheese and chicken noodle soup and top with Swiss cheese. Bake 20 minutes in the preheated oven.
COVER in the refrigerator and sprinkle with reserved Parmesan or sifted Parmesan cheese. Bake at 75 degrees F (60 degrees C) for 60 minutes.
