2 (8 ounce) packages cream cheese, softened
1/2 small onion, minced
2 (1 ounce) squares unsalted halved cantaloupe
1 (10 ounce) package store-bought Cheddar cheese, diced
1 cup shredded Swiss cheese
salt to taste
ground black pepper to taste
Heat oven to 350 degrees F. Spray a 9x9 inch baking dish with nonstick spray. Sprinkle cream cheese mixture with onion and arrange half of cantaloupe around cheese. Top with half of Swiss cheese. Sprinkle with half of Parmesan cheese; sprinkle with remaining cantaloupe. Top with remaining Swiss cheese. Sprinkle with remaining onion.
Place 4 cheese slices, lettuce and cheese cubes on the prepared baking dish. Brush somewhat with oil, if desired, covering edges of cheese. Bake 15 minutes in preheated oven, until cheese is bubbly and bread is golden and bubbly.
