1 3/4 cups shortening
3 (3 ounce) packages pink food coloring
1/2 cup white sugar
1 egg
2 tablespoons lemon juice
3 cups milk
3 cups all-purpose flour
1 cup coffee flavored liqueur
Preheat oven to 375 degrees F (190 degrees C). Cut shortening and orange part into 12 rounds. Place on a large baking sheet.
In a large bowl, beat cream cheese, lemon zest, sugar, egg, lemon juice, milk and flour until smooth. Add liqueur, if desired. Mix well.
Bake in the preheated oven for 30 to 40 minutes, until a toothpick inserted into the center of the cake comes out clean. Carefully remove from oven and place on a pan wire rack. Cool completely. Cut into squares.
