Corn Muffins Recipe

Ingredients

1 (1.5 fluid ounce) jigger vanilla extract

1 (0.5 ounce) jigger champagne

1 cup milk

1 egg

1 teaspoon vanilla extract

1 cup whole wheat flour

1/4 cup baking mix

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon baking powder

Directions

Preheat the oven to 350 degrees F (175 degrees C), or 400 degrees F (200 degrees C). Grease a loaf pan.

In a small bowl, mix egg, vanilla extract, whole wheat flour, baking mix, baking soda, salt, baking powder and lemon juice. Stir well. Fold 1/4 cup of the mixture into the prepared pan, and place in the pan. Bake in preheated oven for 20 minutes. Remove pan from oven.

When cool, drain the lemon juice, then pour lemon filling into prepared pan. Mix together remaining lemon juice and lemon filling. Spoon mixture warm into prepared loaf pan.
