Thanks Chris for sharing. I agree that doubling the pancake mix would have been better, and it's a shame because I 5-starred this recipe. Firstly, I used a potato masher to mash the potatoes (no potato masher near mine) and this worked fine, but the starch seemed to overpower the 5-star potato. Secondly I used a immersion blender instead. Thirdly, I prepared the cornmeal in the microwave for 30 seconds, then placed it in my food processor for a few seconds, until it was smooth. Then I processed in a plate. Finally I placed the potato pieces in a greased 9x13" pan, and broiled it a few minutes, pouring the batter on as I went. It came out fantastic and the cornmeal was really easy to handle. Next time I make this recipe, I'll toast the sweet potatoes before baking so they have a nice golden color.
It was late, I had chicken thawed and was looking for something sweet to do. I stumbled across this recipe and was thrilled to find it receipe- perfect! I even added my own touches for variety--such as making the cake a little bit stiff (baking powder, I could hardly get it to relax), rolling the dough out on a floured board and putting it in a cake pan. All the directions were followed, and nothing I did caused the cake to fall and break apart! The sweetness of this cake is apparent even in the smallest pieces, and the cinnamon is a perfect foil for butter on meat. YUM, YUM, YUM!!!!
this recipe was so easy and my husband wanted another helping.
