4 cups all-purpose flour
1/4 cup white sugar
1/2 teaspoon baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 teaspoons lemon extract
1 cup banana peel
1/3 cup butter, melted
1/2 cup milk
1 egg
1 teaspoon vanilla extract
1 (15 ounce) can sliced blueberries
Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, sift flour, sugar, baking powder, baking soda, salt and lemon extract into a large bowl. Mix together flour mixture and banana peel, then transfer to the prepared pan. Stir flour mixture into banana paste mixture, then add blueberries. Place dish in preheated oven to warm vanilla and lemon mixture over; turn onto serving dish.
Bake in preheated oven for 40 minutes, or until a toothpick inserted into center of each loaf comes out clean. Cool loaf on a warm plate. Cool completely.
Everything is great except for the bananas. I hate blue bananas so I took the suggestion of aflatapalooza and made banana slickers. They are insanely fun to make and they were definitely a hit with my husband! I only changed one thing: I used Bob's Red Mill White Bread instead of white bread. I always use Whole wheat and it turned out great!
